About Ethiopia Guji Organic Dambi Natural
The organic green coffee from the Guji zone in Ethiopia exemplifies the region's emerging reputation for distinctive coffee characteristics, distinguishing it from neighboring areas like Yirgacheffe and Sidamo. The Guji region, with its deep-rooted coffee culture dating back to the 10th century among the Oromo people, continues to employ traditional coffee farming methods. These practices are deeply integrated into the region's way of life, utilizing the rich forest soil to cultivate coffee.
The meticulous process of harvesting involves hand-picking ripe, red coffee cherries across approximately 450 smallholder farms. These cherries are then delivered to the Dambi Uddo Station, where they undergo a critical floating process to remove any underweight or damaged cherries, ensuring only the highest quality beans are processed further. Following this initial cleaning, the cherries are laid out on raised beds in a single layer to dry, a crucial step where they are regularly turned to achieve the ideal moisture content.
This natural dry processing method, a traditional practice in Ethiopia, is instrumental in developing the coffee's unique flavor profile. The resulting coffee boasts notes of strawberry, dried fruit, rose, and green tea, a testament to the traditional methods and careful attention to detail that characterize the Guji region's coffee production. This process not only preserves the rich heritage of Ethiopian coffee cultivation but also introduces coffee connoisseurs worldwide to the exquisite flavors that the Guji Zone's coffee has to offer.
